Zucchini is a great way to cut unecessary carbohydrates out of your diet. Zucchini slices can easily be used in place of pasta in many of your favorite dishes. This vegetable is very versatile in the kitchen and can be eaten cooked or raw. Here is one of my favorite recipes using zucchini in place of pasta in an Italian "pasta" salad recipe!
2 Tbsp olive oil
8 Cherry tomatoes (optional)
1 Clove garlic, minced
2 Tbsp fresh basil or doTERRA basil oi
1 Tbsp balsamic vinegar
1/4 cup pecans (optional)
Slice zucchini lengthwise, halfwise and then into long strips
In a large bowl combine tomatoes, garlic, pecans, basil and oil.
